These soft St Patrick’s day sugar cookies are about to make your March 17th a whole lot of more fun! They are not only green but topped with a fun and delicious rainbow buttercream! Beyond the green coloring in the cookie and rainbow frosting, they’re topped with Lucky Charms to make these cookies the ultimate St. Patrick’s day cookie! Wait, did I mention that the rainbow buttercream is Fruity Pebbles flavor?!!

St Patrick’s Day Sugar Cookies

For today’s post I decided to not reinvent the wheel and to go with a Swig sugar cookie copycat recipe from one my favorite food bloggers, Mel’s Kitchen Cafe. Her recipe is seriously delicious! If you’ve never heard of Swig, let me go ahead and introduce it to you.

Swig is a soda and cookie shop that originated in St George, Utah and has spread like wildfire across the state of Utah (and beyond). They make the most delicious concoctions with soda and their cookies are also pretty yummy! They were originally known for their classic sugar cookie recipe, which is super delicious.  

Instead of opting for the traditional sour-cream based Swig frosting, I went for a more colorful option: Fruity Pebbles buttercream! Not only do I love the flavor the cereal adds to the cookie, I absolutely adore the rainbow flecks in the frosting!

These cookies are seriously so fun! As I was topping each of them with a small handful of Lucky Charms I couldn’t help but smile. They were just so colorful and happy! I think these cookies would be such a fun gift to drop off at friends’ houses for St Patrick’s Day! I even decided to gift these cookies to some friends and wrote “I’m so lucky to have you as a friend!” on the box.

How to Make This Recipe

MAKE THE COOKIES. To make the cookies I will send you directly over to Mel’s blog here. I would recommend adding your green food coloring the same time you add your sour cream!

MAKE BUTTERCREAM. Pulse fruity pebbles in a blender/food processor until it turns into a rainbow dust. Set aside.  Add the room temperature into an electric mixer and mix until it has softened. Add the fruity pebbles, cream, and vanilla and mix until well combined. Scrape the side of the bowls and then slowly mix the powdered sugar one cup at a time until well combined. Turn the mixer onto high and mix for a couple minutes to get your buttercream nice and fluffy!

FROST AND TOP WITH LUCKY CHARMS. Now the fun part…frost your cookies (make sure they are completely cooled!) and decorate with some fun, colorful Lucky Charms!

St Patrick’s Day Sugar Cookies + Fruity Pebbles Buttcream

A green and delicious sugar cookie perfect for celebrating St. Patrick's Day! These cookies are frosted with an incredible Fruity Pebbles buttercream and fun, colorful Lucky Charms cereal!

-Add green food coloring at the same time you're adding sour cream

Ingredients
  

  • 1 C Room temperature unsalted butter
  • 1 T Vanilla Extract
  • 3/4 C Fruity Pebbles cereal, crushed
  • 1/4 C Heavy Cream
  • 4-6 C Powdered Sugar

Instructions
 

  • To make the cookies, please see summary above.

For Buttercream

  • Using a food processor or blender, crush the Fruity Pebbles cereal. Set aside.
  • Put sticks of butter in electric mixer and mix until butter is fluffy and light.
  • Add in cream, Fruity Pebbles, and vanilla. Mix on low until well combined, making sure to scrape the sides of the bowls.
  • Mix in 1 cup of powdered sugar at a time until well combined. Turn mixer on high for 2 minutes to get the buttercream nice and fluffy.
  • Frost cooled cookies and top with Lucky Charms cereal!
